Eggplant clafoutis with mozzarella

2 fairly long eggplants

5 tomatoes

1 special mozzarella bread for baking

1 brick of liquid whole cream

4 eggs

Pepper

Salt

Thyme

Basil

Olive oil



Preparation 
TOTAL TIME: 1 HR
Preparation: 15 min
Cooking time: 45 min
Step 1
Cut the aubergines into thin slices. Put them to drain in a bowl with salt for 30 minutes.
Step 2
Cut the tomatoes into thin slices. Season with salt and pepper.
Step 3
Cut very thin slices of mozzarella cheese.
Step 4
Pat eggplants dry with a paper towel.
Step 5
Put a sheet of parchment paper in a dish. Spray a little oil on it.
Step 6
Alternate eggplant, tomato, mozzarella.
Step 7
Mix the eggs, liquid cream, basil, thyme and salt and pepper.
Step 8
Pour the cream into the dish and sprinkle with thyme. Add a drizzle of olive oil.
Step 9
Bake at 200°C (thermostat 6-7) for 45 minutes.
