Eggplant tomato gratin

1 eggplant

3 tomatoes

1 onion

2 eggs

Grated Gruyère cheese

Cream

Basil

Salt

Preparation: 30 min
Cooking time: 30 min
Step 1
peel the eggplant and cut it into thin slices.
Step 2
Put these slices in a frying pan in olive oil, pat them dry a little.
Step 3
Cut the tomatoes into slices.
Step 4
Finely slice the onion and fry it in olive oil.
Step 5
In a dish alternate layers of tomatoes, eggplants and onions (finish with a layer of tomatoes).
Step 6
Pour over the beaten eggs with a spoonful of cream, salt and basil.
Step 7
Sprinkle with grated gruyère cheese.
Step 8
In the oven for 30 minutes at 200°C.
Author's note
Very good with raw ham as an accompaniment.
