4 eggplants

10 cl white vinegar

1 large handful of basil

150 g cottage cheese

2 cloves of garlic

2 tablespoons olive oil

Pepper

Salt

Cooking time: 5 min
Step 1
Peel the aubergines, cut the flesh into small cubes and blanch them for 5 minutes in boiling salted water with white vinegar and 5 basil leaves.
Step 2
Drain and let cool.
Step 3
Mix the cottage cheese with the crushed garlic and chopped basil leaves. Season and add the aubergines. Sprinkle with olive oil and serve.
