Fillet of Colin with pesto

2 hake fillets

150 g Parmesan cheese or pecorino

basil leaf

Pine nuts

1 eggplant

1 zucchini

2 tomatoes

1 onion

1 bag of tagliatelle

Preparation: 20 min
Cooking time: 10 min
Step 1
Prepare the pesto sauce: finely chop fresh basil, garlic and pine nuts. Add freshly grated parmesan or pecorino. Season with salt and pepper. Tie it all together with olive oil until you get a homogeneous mixture.
Step 2
Fry in a frying pan with two tablespoons of olive oil, eggplant, zucchini and diced tomatoes. Add chopped onions.
Step 3
Add chopped hake fillets.
Step 4
Cook the fresh tagliatelle in boiling salted water until "al dente" and drain.
Step 5
Gently mix vegetables, fish and tagliatelle with pesto. Serve it.
