Gambas with three flavours

Number of people

12 prawns or large shrimps

Olive oil

Sunflower oil

Hazelnut oil

Soft honey type acacia

Black pepper in grain

Lamb's lettuce or mesclun salad

Cherry tomato

Balsamic vinegar

Old-fashioned mustard

1 handful of pine nuts

Preparation: 25 min
Cooking time: 5 min
Step 1
Prepare the 3 marinades and leave to rest for at least 1 hour in the refrigerator:

A/ Soak 4 gambas in the following mixture:

3 tablespoons sunflower oil + 2 tablespoons curry + 1 teaspoon ginger powder + 1 pinch freshly ground black pepper.
Step 4
B/ Soak 4 other gambas in the following mixture:

3 tablespoons hazelnut oil + 2 tablespoons honey + 3 tablespoons sesame seeds.

C/ Soak 4 other gambas in the next mixture:

3 tablespoons olive oil + chopped (or powdered) basil + parsley + garlic + chives.

Before we eat:

Prepare a vinaigrette with 1 tablespoon of balsamic and 1 teaspoon of old-fashioned mustard (seeds).
Step 10
Prepare a balsamic reduction: heat 2-3 spoons of balsamic vinegar over high heat for 5 minutes.
Step 11
Sauté the drained prawns for 1 minute on each side over high heat without adding any fat.
Step 12
Arrange the 4 plates with 1 bed of lamb's lettuce, cherry tomatoes and some pine nuts, season with mustard vinegar.
Step 13
Skewer on each pick, 1 shrimp from each marinade and place the skewer on the bed of lamb's lettuce.
Step 14
Finish with a reduced balsamic line to decorate the dish.
