12 slices of sandwich bread

300 g fresh goat cheese

200 g thick fresh cream

1 bunch of basil

2 cloves of garlic

1/4 red pepper and 1/4 green

Olive oil

30 g butter

4 gelatin leaves

Pepper

Salt

Step 1
Skim the bread and cut the slices in half to form triangles.
Step 2
Melt the butter in a frying pan and brown the triangles on one side only. Drain on absorbent paper.
Step 3
Peel the garlic, chop the basil.
Step 4
Mix the goat, cream and garlic in a blender. Pour into a bowl. Add 2 tablespoons of chopped basil and 2 tablespoons of olive oil. Season with salt, pepper and mix.
Step 5
Soften the gelatin in cold water. Wring it out and melt it in 5cl of boiling water. Stir and then add it to the goat cheese mixture and mix for a long time. Adjust the seasoning.
Step 6
Place the triangles in a charlotte mould, golden side out. Pour the preparation into the pan and press it down by tapping the bottom of the pan on the work surface.
Step 7
Put 6 hours in the fridge. Before serving chilled, remove from the pan by soaking the bottom of the pan for a few seconds in hot water. Decorate with small cubes of peppers and basil.
Author's note
A pinch of chilli pepper or a few drops of Tabasco can be added to spice it up.
