2 very thin veal or turkey cutlets

1 goat log

1 clove of garlic

2 basil leaves

1 egg

2 slices of very thin bacon or fine bacon

Step 1
Spread the slice of bacon or bacon in the escalope.
Step 2
In a bowl, crush the goat, garlic, cut the very small basil or mix it with the garlic, then add to the goat. Mix with egg.
Step 3
Mix well and then place 2 to 3 spoons (depending on the size of the cutlets) of stuffing on the cutlets.
Step 4
Tie the cutlets like paupiettes, then cook for 5 to 6 minutes over medium heat on each side in olive oil, half covered.
