Grilled eggplants with mozzarella

1 eggplant
1 scoop of mozzarella (preferably buffalo) or salted gruyère
Dried tomato
Garlic
Parsley
Basil

Cooking time: 15 min
Step 1
Wash and cut the eggplant into thin slices. Cook them lightly in water (no more than 5 minutes). It makes it easier to cook for the next step.
Step 2
In a frying pan, put the olive oil, add the finely chopped parsley and garlic.
Step 3
Add the eggplant slices and grill them slightly.
Step 4
Remove and drain to remove excess fat from olive oil.
Step 5
Then put on each slice one to two slices of dried tomatoes (depending on the size of the eggplant slice), the gruyère or two slices of buffalo mozzarella, and then add basil.
Step 6
Put in the oven in the grill position until the cheese melts and gilded.
Step 7
Remove and serve hot.
Author's note
I tried to replace dried tomatoes with tomato caviar, it's good but it's not worth dried tomatoes.
