Number of people

125 g plain yoghurt

2 eggs

300 g flour

4 fairly large button mushrooms

2 medium sized tomatoes

20 g grated gruyère cheese

30 g goat cheese

80 g tuna in drained oil

1/2 jar of olive oil

25 green olives cut in half




1 sachet of yeast
For the decoration:

6 tomato slices

6 slices of goat cheese

4 olives cut into slices

anchovy fillet

Step 1
Preheat the oven to 160°C (thermostat 5-6).
Step 2
Prepare the decoration: cut the tomatoes, goat cheese and olives into slices.
Step 3
Cut the tomatoes into slices, the mushrooms into slices, the goat into slices.
Step 4
Empty the yoghurt pot into the bowl and rinse it. With the hand whisk: mix yoghurt, eggs, flour, mushroom slices, tomato slices, grated gruyère, chopped goat cheese, drained tuna, oil (unless the tuna is not drained), chopped olives, coriander, chopped basil and salt.
Step 5
Add the yeast and mix for 1 min. Prepare the mold by lining it with parchment paper. Pour the preparation of the salad bowl into the pan.
Step 6
Bake and bake at 180°C (thermostat 6) for just under 1 hour (55 minutes).
Step 7
When a light crust forms on top, open the oven, and without taking the cake out, quickly place the 6 goat slices then place the 6 tomato slices on top, then over the anchovies and chopped olives and sprinkle with herbes de Provence and oregano (if placed before, everything would sink to the bottom of the cake).
Step 8
Cook again for a few minutes. When the spade or blade used to check the baking comes out dry, remove the cake from the pan and let it cool on a rack.
Author's note
For a smaller cake: keep 1 jar of yoghurt, 2 eggs, 1/2 jar of oil, 1 sachet of yeast but put only 2 jars of flour and reduce the proportions for the other ingredients. Possibility to add onions (previously cooked), capers, grated gruyère on top, salted anchovies in the device, to put also black olives or to replace the green ones by black ones,...
