4 red peppers

1 shallot

6 basil leaves

Step 1
Roast the peppers in the oven so that the skin can be removed and blistered easily. Collect the pulp after removing the seeds of course.
Step 2
Mix all the ingredients, starting with the shallot and garlic, which must be very finely mixed.
Step 3
You get a caviar that comes as an aperitif with toasted toast.
Author's note
This recipe can also be adapted with yellow and orange peppers, green peppers are not suitable. Do not mix the pepper colours under any circumstances.
