2 eggplants

1 yellow pepper

1 onion

2 cloves of garlic

1 large can of tomatoes

Tomato concentrate

Mozzarella

Basil

Pepper

Salt

Preparation: 15 min
Cooking time: 20 min
Step 1
Preheat the oven to 200°C (th 6-7).
Step 2
Wash and cut the aubergines lengthwise. Drain them in salt (optional).
Step 3
Oil an ovenproof baking sheet and place the eggplants, flat side down, against the baking sheet; bake.
Step 4
When the flesh of the aubergines is soft (prick with a knife to check), remove them from the oven and remove the flesh from the aubergines.
Step 5
Save the skin, for later....
Step 6
Sauté the onions, then the diced peppers, garlic and tomato paste, tomatoes, and eggplant meat.
Step 7
Season with salt and pepper.
Step 8
When everything is cooked, place this preparation in the skin of the aubergines, and place thin slices of mozzarella on top.
Step 9
Go under the grill, just long enough to brown the mozzarella.
