600 g squid

2 cloves of garlic

1 onion

1 bouquet garni

3 ripe tomatoes

Saffron

1 tablespoon chopped parsley

1 tablespoon chopped basil

1 tablespoon olive oil

Pepper

Salt

Cooking time: 40 min
Step 1
Wash and cut the squid into thin slices.
Step 2
In a lightly oiled frying pan, brown the squid over high heat, stirring regularly.
Step 3
Once golden, reduce the heat, cover and cook until the water has evaporated completely. Remove them from the pan and set them aside.
Step 4
Peel and chop garlic, onion, parsley, basil and seeded tomatoes. Pour them into a lightly oiled casserole dish with the bouquet garni and saffron. Season with salt and pepper.
Step 5
Prepare 20 cl of vegetable stock, pour it into the casserole dish, add the squid and simmer for 30 minutes under a low heat. Serve.
