Scallops with peppers and feta cheese

Scallops with peppers and feta cheese

Number of people

250 g frozen scallops (without coral)

4 peppers, colour of your choice (for a sweeter-saltier result, choose yellows)

200 g feta cheese (without oil)

Frozen basil

1 glass of white wine

Olive oil



Preparation: 10 min
Cooking time: 20 min
Step 1
Wash and then remove the peppers, cut them into small cubes.
Step 2
In a saucepan: in very hot olive oil, pour in the peppers.
Step 3
After they are browned (1 to 2 min), pour half a glass of white wine, lower the heat and then add the basil at your convenience.
Step 4
Season with salt and pepper (Not too much! The feta cheese we add is already very salty).
Step 5
Simmer for 10 minutes.
Step 6
Meanwhile, in a small saucepan, heat the frozen scallops.
Step 7
Once they have returned their water, discard it and brown it until it turns a very slight brown colour.
Step 8
Add the scallops to the peppers with the rest of the wine (half a glass).
Step 9
Simmer for another 5 minutes.
Step 10
Reduce the heat to a minimum.
Step 11
Add the previously crumbled feta cheese, stir well.
Step 12
Let it heat 2-3 minutes.
Step 13
Remove from heat, let cool and serve.
Author's note
A very pleasant recipe in summer, with a very fresh white wine. I also love it cold, the next day, on a toast (to hell with it!).
