Shrimp rice, tomato, feta cheese "Pipo" style

600 g of shrimp in shell (or more if there are gourmands!)

400 g tomato pulp (or homemade tomato pulp...)

3 tablespoons of olive oil

100 g feta cheese

1 onion (optional)

2 cl whisky

Plain or basmati rice

Parsley

Chives

Basil (your choice, or at the same time!)

Salt

Pepper

Cooking time: 15 min
Step 1
Shell the shrimp.
Step 2
Cook the rice in a pan of boiling salted water in sufficient quantity for the number of people.
Step 3
Sauté the shrimp in olive oil, add the chopped onion (optional, but so much better!).
Step 4
Pour in the whisky and flambé the shrimp.
Step 5
Add the tomato pulp (you can quite easily prepare the pulp yourself with tomatoes peeled, emptied and cut into very small cubes, this will only be better!).
Step 6
Salt, pepper, season with herbs (the mixture of chives, parsley and basil remains my favorite, but you can choose the one you like best!).
Step 7
Put the rice in a bowl, cover with the tomato shrimps, then crumble the feta cheese with your fingers over it...
Step 8
Enjoy your meal!
