4 red mullets

4 tomatoes, milled and chopped

20 cl dry white wine

2 onions, chopped

3 shallots, chopped

1 bouquet garni

Basil powder

Olive oil

Flour

Saffron

Fennel

Pepper

Salt

Cooking time: 40 min
Step 1
Clean and empty the red mullets. Season and fill with bouquet garni and basil. Dust the fish with flour and brown them in a frying pan with olive oil. Keep warm.
Step 2
In the same pan, sauté the onions and shallots. Add the tomatoes and sprinkle with saffron, fennel, salt and pepper. Drizzle with dry white wine and reduce for 10 minutes.
Step 3
Put the fish in a buttered bowl and pour in the sauce. Bake for 20 min at 180° (thermostat 6).
