1 kg of courgette

5 bunch tomatoes

200 g round rice

Olive oil

1 egg

Grated Gruyère cheese

Basil

Pepper

Salt

Preparation: 20 min
Cooking time: 40 min
Step 1
Peel the tomatoes and cut them into quarters.
Step 2
Peel the courgettes coarsely and cut them into slices.
Step 3
In a skillet, heat 2 tablespoons of olive oil. Sauté the courgettes for 5 minutes first, then add the tomatoes. Bring back another 5 minutes.
Step 4
Add the rice, simmer until the water from the vegetables is absorbed, then wet regularly with water until the rice is cooked al dente.
Step 5
Flavour with basil, salt and pepper. Add the beaten egg, mix well, pour into a gratin dish, sprinkle with grated gruyère and bake in the oven in the grill position for a good 5 minutes.

Ideal grill to serve in the summer with grilled meats.
