Shortcrust pastry (homemade or industrial)

800 g tomato (or a small can of tomatoes)

4 slices of bacon

250 g onion

3 tablespoons of olive oil

4 tablespoons of thick fresh cream

2 eggs

50 g grated gruyère cheese


Black olives



1 lump of sugar

Peel and seed the tomatoes, saving 1 or 2 for the top of the pie. Melt the tomatoes until almost no more water is left and add 1 lump of sugar to taste to remove the acidity from the tomatoes, salt and pepper.
Step 3
Melt the onions in a frying pan with olive oil until golden brown with the other sugar cube in it so that it caramelizes well.
Step 4
Prepare the device with melted tomatoes, chopped bacon, onions, crème fraîche, 2 eggs, gruyère, basil and pepper, a pinch of salt but very little.
Step 5
Put the dough in a dish (about 26 cm) (if it is an industrial pulp keep the parchment paper; if you have made the dough yourself put a sheet of parchment paper) bend the edges, prick the dough, pour the device.

Put fresh tomato slices, a few black olives and basil on top.

Hot oven.
Step 9
First 10 minutes at 210°C (thermostat 7).
Step 10
Then 10 mn at 180°C (thermostat 6).
Step 11
Finally 20 minutes at 150-160°C (thermostat 5).
Step 12
The pie should be golden on top if it is not the case do not hesitate to leave it in the oven longer.

This pie is to my taste very good. It can be eaten hot or cold, as a starter or as a main course.
