Vegetarian mint cannelloni with mint

Canneloni to be garnished

4 zucchini

2 fennel bulbs

2 pealed and seeded peppers

1 can of whole tomatoes

1 onion

Mozzarella

2 tablespoons olive oil

1 bunch of mint

basil leaf

Pepper

Salt

Preparation: 20 min
Cooking time: 40 min
Step 1
Sauté zucchini, fennels and diced peppers in 1 tablespoon of olive oil.
Step 2
Let it cool down. Add half of the grated mozzarella, the chopped mint bouquet, salt and pepper.
Step 3
Fill the cannelloni with the vegetables and place them in a gratin dish.
Step 4
Sauté the chopped onion in 1 tablespoon of olive oil. Add the mixed tomatoes, basil, salt and pepper.
Step 5
Once the sauce has been reduced, pour it over the cannelloni. Cover with the rest of the grated mozzarella and bake for 45 minutes at 180°C.
Step 6
