Zucchini clafoutis with Parma ham

4 zucchini

3 slices of parma ham

125 g flour

2 whole eggs + 2 yolks

30 cl of milk

50 g black olives

4 spoons of olive oil

Basil

Thyme

Garlic

Pepper

Salt

15 g butter for the mould

Cooking time: 40 min
Step 1
Preheat the oven to 210°C (thermostat 7).
Step 2
Cut the courgettes into sticks.
Step 3
Fry them in olive oil in a frying pan with thyme. Season with salt and pepper.
Step 4
Cook them until they have a melting texture.
Step 5
In a bowl, whisk together the flour, beaten eggs with salt and pepper.
Step 6
Add the milk, olive oil, chopped olives and basil.
Step 7
Butter a pie pan.
Step 8
Place the courgettes in the bottom, pour the appliance on top.
Step 9
Cut the ham into strips, crumple them slightly and place them on the clafoutis.
Step 10
Bake for 40 minutes.

Both hot and cold, served with a green salad.
