8 round courgettes (2 per person)

1 pepper

200 g fresh goat cheese

100 g grated Gruyère cheese

1 tablespoon olive oil

1 tablespoon basil

Herbs of Provence

Pepper

Salt

Cooking time: 25 min
Step 1
Preheat the oven to 210°C (thermostat 7).
Step 2
Cut the "hat" of the courgette. Empty it with a small spoon.
Step 3
Keep the zucchini meat in a bowl; add the diced pepper, goat cheese, olive oil, basil, herbes de Provence, salt and pepper. Mix it all together.
Step 4
Add the grated gruyère cheese to the mixture and mix.
Step 5
Stuff the courgettes with this preparation. Put the "hats" back on.
Step 6
Bake for 25 minutes of cooking.
Author's note
The stuffing can also be spread on large slices of country bread; put the gruyère on top and grill the slices
