6 slices of bologna

4 eggs

250 g hard bread

Milk

Basil

150 g grated Gruyère cheese

Olive oil

1 onion

2 garlic

1 bouquet garni (parsley, thyme, bay leaf)

Pepper

Provide sewing thread

Prepare the stuffing:

Soak the hard bread in the milk.

Squeeze it out a little. Add the eggs, gruyère, finely chopped basil and salt and pepper to the bread.

Knead so that the stuffing is homogeneous and compact.

Take 1 slice of mortadella, add in the middle of the slice a roll of stuffing, roll the mortadella around and close with sewing thread all around to hold.

Prepare the sauce:

Sauté onion and garlic in a little olive oil, add the peeled tomato can and bouquet garni.

Simmer for 10 minutes.

Add the mortadella rolls and simmer over low heat for 45 minutes, the stuffing should taste like tomatoes.
