Caramelized peaches with basil

Caramelized peaches with basil

Number of people

4 peaches (yellow or white)

1 tablespoon honey

50 g slivered almonds

50 g icing sugar

3 basil leaves

2 scoops of ice cream (vanilla, hazelnut or other)

Preparation: 15 min
Cooking time: 10 min
Step 1
In a frying pan, put the almonds and icing sugar to caramelize over low heat without adding fat.
Step 2
Caramelize for about 10 minutes, stirring regularly.
Step 3
Cut the peaches into 6 wedges and brown them in another pan over low heat with honey.
Step 4
Chop the basil.
Step 5
Sprinkle peaches and honey with basil when honey has melted and stir.
Step 6
Once the almonds are caramelized, remove them from the heat and spread them on a plate to prevent them from sticking together.
Step 7
Allow to cool.
Step 8
Once cooled, break them roughly.
Step 9
Use two ice cream cups (or other container) and put a scoop of ice in each, then almonds and a layer of peaches.
Step 10
Repeat and finish with almonds. Drizzle with the remaining peach cooking juices.
Step 11
Serve immediately.
