Chicken and Lemon Pasta

Number of people

300 g pappardelles (broad pasta)

300 g chicken breast

1 zucchini

1 carrot

1 onion

1/2 lemon

10 sprigs of chives

50 g butter

1 dose of saffron

10 cl of fresh cream

12 basil leaves

50 g grated parmesan cheese

Preparation: 30 min
Cooking time: 15 min
Step 1
Wash and dry the lemon
Step 2
Take 1/2 zest of the lemon and cut it into julienne strips.
Step 3
Blanch it in water for 1 min
Step 4
Squeeze half of the lemon and filter the juice.
Step 5
Wash the zucchini, peel the carrot and grate them.
Step 6
Sauté the chicken cut into strips in butter, add vegetables and onion.
Step 7
Let it cook 3 min over low heat, drizzle with the lemon juice, then add the cream mixed with the saffron.
Step 8
Add salt and chives cut into 1 cm pieces.
Step 9
Mix the pasta with the meat, adding pepper, lemon zest and parmesan.
