Number of people

1 whole chicken

2 tablespoons balsamic vinegar

1 bunch of basil

3 lemons

1 jar of pitted olives

Groundnut (optional)



Preparation: 10 min
Cooking time: 45 min
Step 1
Bake the chicken in the oven at 200°C (thermostat 6-7), between 45 min and 1 h depending on its size.
Step 2
Meanwhile, make the sauce by mixing the vinegar, juice of 2 lemons, chopped basil, salt and pepper. Cut the last lemon into slices and add it to the sauce with the olives and crushed peanuts.
Step 3
Baste the chicken regularly with this sauce during cooking.
Author's note
Before putting the chicken in the oven, you can stuff it with a small Swiss cheese mixed with basil to flavour it and make the meat softer. When the chicken is cooked, don't forget to empty it of its little Swiss to add it to the sauce. Serve with vegetables of your choice.
