4 chicken cutlets

1 yellow pepper

1 red pepper

1 can of corn

100 g black mushroom

1 eggplant

1 zucchini

1 onion

1 large tablespoon peanut butter

Pepper

Salt

Basil

Preparation: 1 hour
Cooking time: 40 min
Step 1
Dice the chicken cutlets, fry them in a fat-free wok and cover for 10 minutes. Once well cooked, remove the lid to brown them on the surface.
Step 2
Reserve.
Step 3
Cut the onion into small pieces, the peppers into strips, the eggplant and the courgette into cubes.
Step 4
fry the onion in olive oil. Once it has sweated well, add the eggplant, then the zucchini and peppers while stirring.
Step 5
Once well cooked, add the mini corn and black mushrooms (previously rehydrated 30 min in a bowl of water).
Step 6
Season with salt and pepper and add a good tablespoon of peanut butter.
Step 7
Add the chicken, cook 10 min over high heat in the wok, stirring vigorously, never covering the preparation.
Step 8
Serve hot with a flavoured rice.
