1 roll of puff pastry ready or if you have the courage, a homemade puff pastry

400 g of filleted saithe or cod back

1 bunch of basil

4 county strips

Milk

Pepper

Salt

Cooking time: 35 min
Step 1
Preheat the oven to 210°C (thermostat 7).
Step 2
Steam the cod for 10 minutes, making sure that the core is not completely cooked (it will finish cooking in the oven)
Step 3
Drain it well.
Step 4
Roll out the dough, divide it into four and place whole basil leaves on top, half of the county strips cut into cubes.
Step 5
Put the fish on top and arrange the rest of the cheese,
Step 6
season with salt and pepper.
Step 7
Make a slipper by folding the edges of the dough over the top, make sure that you can see the fish.
Step 8
Brown the puff pastry with a little milk and put them in an ovenproof dish.
Step 9
Bake in the oven for 25 min.
Author's note
Serve on a plate with a green salad, it is possible to garnish the recipe with a basil coulis.
