600 g courgette

250 g goat cottage cheese (or fresh goat cheese, like Petit Billy)

3 tablespoons of very fine wheat semolina

100 g breadcrumbs

3 tablespoons of olive oil

50 g unsalted pistachio nuts

4 tablespoons finely chopped basil

Cooking time: 30 min
Step 1
Preheat the oven to th 5/6 (150-180°C).
Step 2
Wash the courgettes; then grate them in a food processor.
Step 3
Mix the grated zucchini with the goat cheese, add the fine semolina and chopped basil; salt, pepper and set aside.
Step 4
Grill the pistachios in a fat-free pan. When they are golden brown, chop them coarsely.
Step 5
In a bowl, combine the bread crumbs and olive oil with your fingertips, then add the chopped pistachios.
Step 6
Pour the zucchini-cheese mixture into an ovenproof dish, sprinkle the breadcrumbs evenly over the zucchini, then cook for about 30 minutes.
Author's note
It is possible to replace basil with mint, which goes very well with goat cheese...
