Eggplant and feta quiche

Eggplant and feta quiche

Number of people

1 puff pastry dough

1 eggplant

200 g feta cheese

2 eggs

2 tablespoons of fresh cream

Basil, preferably fresh

slice of candied lemon (optional)

Preparation: 30 min
Cooking time: 1 h
Step 1
Prick the skin of the eggplant, bake it in a soft oven (150°C) for 30 to 40 minutes. Crush the flesh of the eggplant.
Step 2
Beat the eggs, add the crème fraîche, and half of the crumbled feta cheese. Add eggplant to this mixture.
Step 3
Place the dough in a tart pan, then pour the mixture into it. Sprinkle with the rest of the crumbled feta cheese, basil, decorate with a few slices of candied lemon and drizzle with olive oil.
Step 4
Bake in a hot oven (180°C) for 35 minutes.
Author's note
If you make the dough yourself, add a few basil leaves and parmesan shavings.
