Fish Papillotes with Pesto

Fish Papillotes with Pesto

Number of people

4 fish fillets (salmon, halibut, cod...)

1 tray of cherry tomato

2 shallots
For pesto (a prepared pesto will do just as well):

2 bouquets of basil

10 cl olive oil

120 g pine nuts

80 g Parmesan cheese

2 cloves of garlic

Preparation: 15 min
Cooking time: 40 min
Step 1
For the pesto:
Step 2
Brown the pine nuts in the pan for 3 to 5 minutes.
Step 3
Remove all stems from the basil to keep only the leaves.
Step 4
Grate the parmesan cheese.
Step 5
Crush (with a knife or garlic press) the garlic cloves.
Step 6
Mix everything together, adding olive oil, salt and pepper until it has a creamy consistency.
Step 7
For the papillotes:

Preheat the oven to 180°C (thermostat 6).
Step 9
Cut 4 pieces of aluminium according to the size of your nets.
Step 10
Finely slice the shallots.
Step 11
Cut the cherry tomatoes in half.
Step 12
Arrange the fish on the aluminum, distribute the pesto, cherry tomatoes and chopped shallots evenly.

Season with salt and pepper.
Step 14
Bake for 40 minutes.
Step 15
Once cooked, remove the aluminum and serve with spaghetti.
