Fresh shrimp and zucchini mousse

Fresh shrimp and zucchini mousse

Number of people

250 g shrimp

1 zucchini

1 clove of garlic

25 cl of liquid cream

3 eggs

2 tablespoons potato starch

Olive oil

sprig of chives



Butter for ramekins
For the decoration:

basil leaf


Tomato coulis

Preparation: 10 min
Cooking time: 35 min
Step 1
Brown the minced garlic in a little oil.
Step 2
Grate the courgette with a carrot grater, and add it to the garlic, it must lose some of its water.
Step 3
Shell the shrimp, chop them as finely as possible.
Step 4
Put the zucchini, shrimps in a bowl with the cream, starch, salt and pepper.
Step 5
Stir well, add the egg and chives, stir again.
Step 6
Butter the ramekins, and pour the mixture into them.
Step 7
Cover with aluminium foil and cook 40 min under steam or in a double boiler.
Step 8
Place in the refrigerator for about 3 hours.
Step 9
Place tomato coulis at the bottom of a small white plate, with a small spoon, and add yogurt tips.
Step 10
Decorate with basil.
Step 11
Unmould the preparation with a small knife, if there is any left at the bottom of the mold, re-read it with a spoon on the foam.
Author's note
You can even serve it in summer, as a dish, with a little rice, mixed with wild rice... Add also some pan-fried shrimps around....
