1 leek

2 tomatoes

1 handful of grated Swiss cheese

Basil

Cooking time: 15 min
Step 1
Brown the leeks in a knob of fat, then when they start to melt, add the diced tomatoes and simmer for 5 minutes.
Step 2
Then mix the vegetables, eggs, cheese and seasoning, pour in the dish and bake for about 15 min at 180°C (thermostat 6).

Frittata means "omelette" in Italian, even if I don't really guarantee the origin of this recipe! Enjoy your meal!
