Mussels of the bouchot in my own way

1 kg of mussels (if possible bouchot)

1 shallot

Parsley

Chives

Basil

10 cl of Charentes white Pineau

1 cube of vegetable stock

20 cl of cooking soya

Turmeric

1 tablespoon olive oil

Soy sauce





Preparation

Preparation: 20 min
Cooking time: 18 min
Step 1
Scrape and rinse the mussels and discard the open ones.
Step 2
Scissor thin the herbs.
Step 3
Slice the shallot.
Step 4
Prepare 150 ml of broth.
Step 5
Prepare half of the soybean brick and add the turmeric at your convenience.
Step 6
In a saucepan, pour the tablespoon of olive oil over low heat and sauté the minced shallots for a few minutes, stirring,
Step 7
Pour in the pineau and simmer for 3 to 4 minutes.
Step 8
Add the chopped herbs and a few drops of soy sauce. According to, add the dried herbs of bouquet garni, and simmer 2 to 3 min.
Step 9
Add the broth and simmer for 3 to 4 minutes.
Step 10
Finish by pouring in the cooking soya + turmeric, stir and simmer for 2 minutes.
Step 11
Finally, pour in your moulds to open them over medium heat.
