My vegetable pie

250 g flour

125 g butter

Dehydrated Provençal Herbs


1 onion

2 courgettes

1 eggplant

1 red or yellow pepper

Cherry tomato

1 egg

1 tablespoon liquid cream

Step 1
For the dough, mix the flour and herbs of Provence, then add the butter and a little water.
Step 2
Once the dough is well homogeneous, let it rest.
Step 3
In a large deep-bottomed frying pan, heat olive oil.
Step 4
Slice the onion and brown it in the pan.
Step 5
Then add, as soon as the onion becomes translucent, the diced pepper, then the zucchini and finally the eggplant last, so that it does not "drink" the oil. Season with salt and pepper.
Step 6
Reduce for a good 20 minutes.
Step 7
Spread the dough, grease a pie pan and place the dough in it.
Step 8
Finally, mix the egg and vegetable cream and place the device on the dough.
Step 9
Arrange the cherry tomatoes cut in half and a few basil leaves on top.
Step 10
Put in the oven for 30 min at 220°-230°, thermostat 7-8.
Step 11
Serve warm warm or cold with a green salad.
