Papillote of red mullets, prawns and scallops

Papillote of red mullets, prawns and scallops

Number of people

4 parchment paper

4 red mullets flaked and filleted (by the fishmonger who is nice)

8 frozen raw prawns

4 scallops

4 tablespoons of pastis

basil leaf

1 clove garlic, chopped

4 tablespoons of olive oil

Preparation: 15 min
Cooking time: 7 min
Step 1
Thaw the prawns, shell them, leaving only the tail.
Step 2
Preheat the oven to 220°C (thermostat 7).
Step 3
Prepare 4 papillotes: oil each rectangle of paper with a brush (or sopalin), place the red mullet on the bottom, the prawns on top and finally the whole scallops.
Step 4
Sprinkle with pastis and a few basil leaves depending on the season (otherwise a small pinch of herbes de Provence, or oregano...), a pinch of crushed garlic, salt, pepper and finally a dash of olive oil.
Step 5
Close the papillote tightly.
Step 6
Put in a hot oven for 7 minutes and enjoy immediately.
Author's note
This dish reminds me of the South, I serve it with a puffed palm tree with tapenade and a small ratatouille in a glass.
