Pork Mignons with Tapenade

500 g filet mignon

100 g pitted black olives

1 teaspoon tomato paste

1/2 glass of white wine

1 shallot

2 cloves of garlic

30 cl of fresh cream

Basil

Parsley

Chives

Rosemary

50 g butter

Olive oil

Pepper

Salt

Preparation: 2 hrs
Cooking time: 15 min
Step 1
Chop the olives. Season the pork chops with pepper and salt. Marinate them in olive oil, crushed garlic and rosemary for 2 hours.
Step 2
Brown them in butter on each side for 10 minutes. Book them. In the pan, put the chopped shallot, white wine, cream and tomato paste. Mix and add the butter. Add herbs, salt and pepper and olives.
Step 3
Pour the sauce over the pork chops.

Recommended accompaniment: fried potatoes or green beans.
