Potato stew with onions and mushrooms

Potato stew with onions and mushrooms

Number of people

12 new potatoes

12 button mushrooms

2 handfuls of onion, minced

1 tomato coulis

2 tablespoons olive oil

Preparation: 45 min
Cooking time: 45 min
Step 1
Wash the potatoes, put them in a bowl, pour in a tablespoon of olive oil, a mixture of all the spices and a pinch of coarse salt, mix by hand so that the potatoes are well coated.
Step 2
Put in the oven for about 40 min at 180°C (thermostat 6).
Step 3
Meanwhile, slice the onions, wash the mushrooms and cut them into 4.
Step 4
Sauté the onions and mushrooms in a tablespoon of olive oil over low heat, sprinkle with the spice mixture, mix well so that they are coated.
Step 5
When the potatoes are golden brown, cut them in half (or not), add them to the vegetables, mix, sauté for a few minutes, then add the tomato sauce and simmer for about 10 min.
Step 6
Serve hot.

Maybe a good main course with a good salad, or a chicken and herbs side dish.
