Quinoa dumplings and zucchini

50 g quinoa

50 g Roquefort cheese (or blue, or morbier)

1 zucchini

2 eggs

1 tablespoon chopped basil

3 tablespoons of chickpea flour

Salt

Pepper




Preparation

Cooking time: 25 min
Step 1
Cook the quinoa as indicated on the package.
Step 2
Cut the Roquefort into small cubes.
Step 3
Wash and grate the courgette. Wring it out well in your hands to extract as much water as possible.
Step 4
In a bowl, mix the quinoa, Roquefort cheese, courgette, salt, pepper, 2 small beaten eggs, basil and flour.
Step 5
Make dumplings with two spoons and place them on an ovenproof dish. Put parchment paper on the bottom of the dish or a drizzle of oil so that it doesn't stick.
Step 6
Bake and let cook 25 min at 200°C (thermostat 6-7).
Step 7
The quenelles are cooked when they are a little golden.
