4 red mullet gurnards or 8 gutted red mullet barbets

100 g smoked bacon

1/2 fennel bulb

1 tablespoon chopped basil

1 tablespoon olive oil

Pepper

Salt

Preparation: 15 min
Cooking time: 15 min
Step 1
Chop the bacon and fennel. Mix them with basil, olive oil, a little salt and pepper.
Step 2
Stuff the red mullets with this mixture, and wrap them in aluminum foil. Fry the papillotes and cook for 15 minutes on the barbecue, or under the oven grill. Turn them over halfway through cooking.
Step 3
Serve with mashed potatoes in olive oil and grilled fennel.
