250 g red mullet

2 eggplants (25 cm)

1 courgette (40 cm)

1 bunch of basil (10 leaves)

1 clove of garlic

Olive oil




Preparation

Preparation: 1 hour
Cooking time: 20 min
Step 1
Courgette coulis: cook the courgette ( after emptying it) in water. Mix the courgette with the basil, garlic and olive oil.
Step 2
Eggplant bed: cut strips of eggplant 0.5 cm thick. Season with salt, pepper and a drizzle of olive oil.
Step 3
Brown in the oven (grill).
Step 4
Cooking red mullets: cook in a frying pan with olive oil for 4 to 5 minutes.
Author's note
For the presentation, arrange the cougettes in crossed layers. Then place the fillets on the top floor on the visible skin side. Then place the grout on the red mullets.
