6 tomatoes

1 red pepper

1 cucumber

1 onion

1 clove of garlic

1 pinch of cumin

1 pinch of oregano

1 pinch of basil

1 pinch of salt

parsley leaf

1 sprig of fresh mint

5 cl oil (to taste)

5 cl vinegar (to taste)

Preparation: 15 min
Step 1
Peel the tomatoes, cut them into pieces and mix them in a blender.
Step 2
When they are pureed, add all the other ingredients and blend until everything is completely liquid.
Step 3
Finally, pass the liquid through a Chinese or sieve, add water and ice cubes. Set aside in a cool place at least 2 hours before serving.
Author's note
Do not replace fresh mint with dried mint, as it is this ingredient that gives the gazpacho its refreshing characteristic. You can replace the garlic clove with a pinch of deshidrated garlic or remove it if you don't like the taste of the garlic too much
