800 g fresh button mushrooms

800 g whole saithe tied up as a roast

1 onion

3 peeled tomatoes or a small can of peeled tomatoes

1 clove of garlic

1 tablespoon chopped basil

Olive oil

1 bouquet garni

Pepper

Salt

Cooking time: 20 min
Step 1
Wash the mushrooms after cutting the sandy end and slice them.
Step 2
Fry them with the chopped onion in a large casserole dish with 1 tablespoon of olive oil.
Step 3
Add the crushed garlic, peeled tomatoes and basil.
Step 4
In a non-stick frying pan, brown the roast on all sides in 1 tablespoon of olive oil and place it in a casserole dish with the bouquet garni. Season with salt and pepper. Add the mushrooms, tomatoes, onion.
Step 5
Bake in the oven and cover for 5 to 10 minutes, basting occasionally.

Serve hot.
