2 medium eggplants


4 tablespoons of olive oil

175 g fresh parmesan cheese

20 basil leaves

Step 1
Thinly slice the aubergines lengthwise (without peeling them), so as to obtain 20 slices in all.
Step 2
Salt lightly and let it drain for 15 minutes, rinse and sponge.
Step 3
Brown the eggplant slices in olive oil over medium heat, 2 to 3 min on each side.
Step 4
Cut the parmesan cheese into 20 thin slices.
Step 5
Place 1 slice of parmesan cheese, 1 basil leaf and a little pepper on each slice of eggplant. Roll it over itself and hold it with a wooden spike.
Step 6
Place them in a dish and put them in the oven under the grill for 3 minutes at 200°C (th 6-7), without letting them brown.
Author's note
It is essential to let the aubergines slit their throats to get rid of their bitterness. But rinse them well and do not salt them afterwards. We can put something other than Parmesan cheese on for a change.
