3 eggs

2 tomatoes

1 young onion

4 slices of bacon (to taste)

1 pinch of Espelette pepper (generous)

1 pinch of basil (generous)

Pepper

Salt




Preparation

Preparation: 5 min
Cooking time: 15 min
Step 1
Finely chop the onion, then the bacon, and fry them in a little olive oil until the bacon is cooked, but not toasted.
Step 2
Peel the tomatoes, dice them medium thick, and add them to the onion and bacon.
Step 3
Simmer for a few minutes until the tomato melts a little, then break the eggs in the pan.
Step 4
Stir with a spatula until the egg is cooked.
Author's note
Serve with a good green salad and a slice of toasted bread rubbed with garlic.
