180 g linguine

1/2 fennel

100 g green olive

100 g fresh pistachio nuts

10 basil leaves

12 cherry tomatoes

1 clove of garlic

1/4 pressed orange

1/2 teaspoon Espelette chilli pepper

Salt

Pepper

Cooking time: 10 min
Step 1
With a pestle, crush the pistachios, chop the basil and cut the cherry tomatoes into 4.
Step 2
Launch salt water for linguine.
Step 3
Cut the half fennel into strips and sauté 5 min in olive oil with garlic and green olives.
Step 4
Season with salt, pepper, Espelette pepper, thyme and a quarter of pressed orange, let it brown for another 5 minutes.
Step 5
Once the Linguines are cooked (keep some cooking water), mix them with the vegetables.
Step 6
Adjust with cooking water if the mixture is too dry.
Step 7
Sprinkle with basil, pistachios and cherry tomatoes and serve.
