Smoked salmon rolls with herbs

Smoked salmon rolls with herbs

Number of people

12 slices of smoked salmon

50 g of soya germs

1 bunch of coriander

1 bunch of fresh mint

1 bunch of basil

100 g arugula or mesclun

2 white onions

1 lemon

4 tablespoons of olive oil

2 tablespoons soy sauce

Preparation: 10 min
Step 1
After carefully washing all the herbs, mix the lemon juice with the soy sauce and olive oil.
Step 2
On each salmon slice, dipsose 2 sprigs of coriander, 2 sprigs of mint, 2 sprigs of basil and a few shoots of soya, then sprinkle with a small spoon of vinaigrette. Roll up the salmon slices.
Step 3
Add the chopped onions to the rest of the vinaigrette and season the arugula or mesclun.
Step 4
Serve the arugula or mesclun with the smoked salmon rolls.
