1 package of lasagna dough

3 onions

2 cloves of garlic

1 stalk of celery stalk

1 carrot

600 g ground beef

800 g tomato sauce

20 cl red wine

15 cl water

70 g grated cheese

125 g Parmesan cheese

25 g butter

1 bowl of milk

2 bay leaves

1 sprig of thyme

6 basil leaves

For the béchamel sauce:

95 cl of milk

95 g flour

95 g butter

2 pinches of shredded nutmeg

Salt

Pepper

Cooking time: 25 min
Step 1
Peel the garlic cloves and chop them finely. 
Peel the onions and slice them finely. 
Peel the carrot and celery and chop finely.
Step 2
In a casserole dish, sauté the garlic and onions with a little olive oil. 
Add the chopped carrot and celery and add the meat. Mix and sauté everything.
Step 3
After 10 minutes, add the wine and simmer until it evaporates.
Step 4
Add the tomato coulis, salt, pepper and mix well. Add water and herbs and simmer for 45 minutes over low heat.
Step 5
Preparation of the zero-lump béchamel sauce. The secret of a lump-free béchamel sauce is to start by making lumps! 
In a saucepan, melt the butter.
When it foams, add the flour at once and let it roast for a few minutes on the stove. 
Then add the cold milk little by little. The sauce will form small balls that will relax as the milk is added, gradually resulting in a smooth texture.
Add the nutmeg, salt and pepper and let it thicken over low heat without ceasing to stir.
Step 6
Preheat the oven to 200°C (thermostat 6-7). 
Oil a lasagna dish and start with a thin layer of béchamel in the bottom of the dish. Continue with a layer of lasagne sheets previously soaked in milk, this is the guarantee of very soft lasagne after cooking. Cover with a good layer of bolognese, béchamel sauce and sprinkle with parmesan cheese. 
Repeat the operation until the ingredients are exhausted and finish with a layer of béchamel sauce covered with grated cheese. Place a few knobs of butter on top of the dish.

Bake for 25 minutes.
Step 8
For lasagna that stands up well on the table, as beautiful as in a restaurant, prepare it in advance so that it has time to cool down. Then warm up on the table and they will stand up perfectly.
