Spicy pasta salad

Spicy pasta salad

Number of people

350 g short pasta (butterflies, penne...)

150 g mozzarella cheese, diced

300 g of tomato sauce

4 dried tomatoes

1 can peeled pepper

2 tablespoons capers

80 g of black olives from Nice

2 cloves of garlic

1 teaspoon dried oregano

1 small bunch of basil

10 cl olive oil

3 tablespoons of wine vinegar

1 teaspoon sugar

1 pinch of cayenne pepper

Cooking time: 10 min
Step 1
In a bowl, combine vinegar, sugar, olive oil, salt and pepper, chilli, oregano and crushed garlic cloves.

Cook the pasta and drain.
Step 4
Cook the tomato coulis in a frying pan, and throw the pasta in it.
Step 5
During cooking, add the dried tomatoes cut into thin strips, olives and capers.
Step 6
Let cool, stirring often, then pour into a bowl.

Drizzle with the spicy vinegar and mix.
Step 8
When the pasta is cold, add the diced peppers and mozzarella and a few chopped basil leaves.

Mix and serve warm or hot.
Author's note
I always prepare the salad the day before, so that it is fresh when it is time to serve. Excellent, to accompany a barbecue or for an aperitif dinner!
