2.5 kg of spinach

105 g butter

6 eggs

3 tablespoons basil

5 cl of vinegar

Pepper

Salt



Preparation

Cooking time: 10 min
Step 1
Chop the spinach and melt it in butter with 1 tablespoon of basil.
Step 2
Poach the eggs in boiling vinegar water for 5 minutes.
Step 3
Divide the spinach among the plates and place 1 poached egg in the centre.
Step 4
Sprinkle with basil, salt and pepper.
