Spring turkey waterzooi

Number of people

800 g turkey

2 water

1 bouquet garni (celery carrot celery leek thyme laurel a sprig of parsley), all tied with a string

1 tablespoon chopped parsley

1 tablespoon chopped chives

1 tablespoon chopped chervil

1 tablespoon basil

8 carrots

16 snap beans

8 asparagus

1 zucchini

1 dl of fresh cream

4 tablespoons cornstarch

Pepper and nutmeg


Preparation: 30 min
Cooking time: 45 min
Step 1
In a large saucepan, place the pieces of osso buccu and cover them with cold water.
Step 2
Bring to a boil, foam gently until the foam disappears.
Step 3
Add the bouquet garni, salt and pepper and cook for 1/2 hour, in small amounts.
Step 4
Cut all the vegetables into small cubes.
Step 5
After 30 minutes of cooking, remove the bouquet garni
Step 6
Add the vegetables and cook for about 10 minutes.
Step 7
Just before serving, add the cornstarch diluted in the crème fraîche, then the herbs and adjust the seasoning with pepper and nutmeg.
