Tuna bread with basil and garlic

Tuna bread with basil and garlic

Number of people

500 g canned tuna in its natural state

8 eggs

100 g of fresh cream

80 g flour

1 bunch of basil

6 cloves of garlic

2 egg yolks

1 lemon

40 cl olive oil



Preparation: 30 min
Cooking time: 1 h
Step 1
Wash the basil and chop it. Drain and crumble the tuna.
Step 2
Mix the eggs, cream, flour and tuna. Season with salt and pepper, add 2 tablespoons of oil and basil. Pour into an oiled cake pan.
Step 3
Place the pan in a double boiler and bake for 1 hour in the oven at 200°C (thermostat 6-7). Cover with aluminum after 45 minutes.
Step 4
Peel and crush the garlic cloves finely. Mix them with the egg yolks, salt and pepper. Add the oil in a drizzle and whisk as for a mayonnaise.
Step 5
Finally, add the lemon juice and set aside in a cool place.
Step 6
Serve the cold tuna bread with the garlic.
